Ingredients
  

  • 2 pounds ground beef
  • 1 large onion diced
  • 2 teaspoons garlic powder
  • 3 Tablespoons chili powder
  • 3/4 teaspoon cayenne pepper
  • teaspoons cumin
  • 1 Tablespoon dried oregano
  • 1 can (4 oz) chopped green chilis
  • 1 can (28 oz) petite diced tomatoes
  • 1 6 can (6 oz) tomato paste
  • 2 cans (15.5 oz) kidney beans drained and rinsed
  • 1 can (15.5 oz) can pinto beans drained and rinsed
  • 3-4 cups water

Instructions
 

Prepare the Base

  • In a large skillet, brown the ground beef with the diced onion over medium heat.
  • Once the beef is fully cooked, drain the fat.
  • Stir in the garlic powder, ensuring the flavors blend evenly.

Combine Ingredients

  • Transfer the cooked meat mixture to your slow cooker or Dutch oven.
  • Add the following ingredients to the pot: chili powder, cayenne pepper, cumin, oregano, green chilis, diced tomatoes, tomato paste, kidney beans, pinto beans, and water. Start with 3 cups and adjust based on your desired thickness.
  • Stir everything well to combine.

Cooking Method

  • Slow Cooker: Set the slow cooker to low and cook for 6-8 hours, stirring occasionally if possible to ensure even cooking and prevent sticking.
  • Dutch Oven/Stove Top: Place the Dutch oven on the stove over low heat. Allow the chili to simmer gently for at least 4 hours, stirring often to prevent it from burning.

Notes

  • Serve with shredded cheese, sour cream, and diced green onions for a topping bar.
  • Pair with grilled cheese, cornbread, crackers, or a warm baguette for dipping.
  • Add hot sauce for an extra kick.
