My Dad had a big sweet tooth, I blame him for mine! This was quite possibly his favorite, especially during peak strawberry season, so this always reminds me of him!

Strawberries and Pie Crust Cookies with Ice Cream
Ingredients
- 1 quart fresh strawberries
- ¼-½ cup sugar
- favorite pie dough recipe
- sugar for sprinkling
Instructions
Strawberries
- Wash, hull and slice strawberries and place in a bowl.
- Add sugar, starting with a ¼ cup to strawberries and stir. Tasting is a must - if they taste like they need more sugar, add more!
- Set aside and let those strawberries macerate, get all soft and sweet. And the juices it will create!
Pie Crust Cookies
- Using your favorite pie dough recipe or your favorite boughten pie crust {unbaked} - roll out and cut circles, or squares or stars or simply cut into rough shapes.
- Placed on a lined cookie sheet and sprinkle with granulated white sugar.
- Bake in a 375° pre-heated oven for 7-9 minutes, until they are lightly browned, crispy and baked.
Assembly
- We like to eat the sweetened strawberries over vanilla ice cream with the pie crust cookies crumbled over the top.
