Ranch Beans, Beef and Cornbread Casserole is a one-skillet meal that’s easy to put together. A couple of cans of Ranch Beans, ground beef and your favorite cornbread mix for an easy comfort food dinner!
You guys sometimes I get a little over-excited about a recipe! This is one of those recipes, the simplicity of making it but all the flavor. And seriously anything with cornbread speaks straight to my soul!
If you start with an ovenproof skillet this is a one-pan meal!
Brown the hamburger and diced onions until ground beef is no longer pink.
Drain the excess grease from the pan.
Add in both cans of Ranch Style Beans – do not rinse these beans – they are in a sauce that provides the flavor. Then add the diced jalapenos to your liking and the pickled juice from the jalapenos. Give it a good stir!
Mix up your favorite cornbread mix according to package directions or your favorite homemade cornbread then slowly and carefully pour it over the top of the ground beef mixture. Pour slow and steady so that the cornbread stays on top of the beef mixture. Pop it in the oven!
Once cornbread is done in the center sprinkle with shredded cheese and back in the oven for just long enough to melt the cheese.

Ranch Style Beans are one of my favorite things because they are already packed full of good flavors. A great way to make a meal quickly because the spices are all there! I think you could use chili beans in this recipe if you can’t find these Ranch Style Beans.
Serve this up with additional extra cheese, sour cream, cilantro, jalapenos and anything else that sounds good to you! If there happens to be any left this tastes just as good the next day as leftovers!

Ranch Beans, Beef and Cornbread Casserole
Ingredients
- 1 medium onion, diced
- 1½ pounds hamburger
- 2 15 ounce cans Ranch Style Beans
- 1-2 Tablespoons diced pickled jalapenos optional
- 1 Tablespoon pickled jalapeno juice optional
- 1 package favorite cornbread mix, made according to package instructions
Instructions
- In an oven proof skillet brown the hamburger and diced onion until hamburger is completely cooked. Drain any extra grease from the pan.
- Stir into the hamburger both cans of Ranch Style Beans, don't drain or rinse you want all that flavor.Stir in the diced pickled jalapenos and the jalapeno juice.
- Prepare cornbread according to package directions or make a batch of your favorite homemade cornbread
- Carefully and slowly pour the cornbread batter over the bean and hamburger mixture. Being careful that it stays on top of the hamburger mixture as much as possible.
- Bake at 375° in a pre-heated oven for approximately 30-35 minutes until cornbread is done in the center.
- Once the cornbread is done, put the shredded cheese on top and pop it back in the oven for 3-5 minutes until the cheese is melted!
- Can serve with jalapenos, sour cream, cilantro.......anything that sounds good!
