I love oatmeal cookies – like love that so much if we were kids someone could say to me “if you love them why don’t you marry them”! And I would say “OK that sounds like a great idea” – I love them that much!

I believe oatmeal cookies are an ideal breakfast food. If truth be known I think a lot of things are ideal breakfast foods that no one else does. You know like my Mom or the rest of normal society, probably wouldn’t think would make ideal breakfast food. But I believe I could make a real case in front of the Breakfast Food Court for oatmeal cookies.

My middle kid loved these! They are just enough different from other oatmeal cookies thanks to the molasses. They stayed soft and chewy as well.

Old Fashioned Oatmeal Molasses Cookies
Ingredients
- 1/2 cup butter, room temperature
- 1/2 cup brown sugar
- 1/4 cup sugar
- 1 egg
- 1 Tablespoon molasses
- 3/4 cup flour
- 1½ cups rolled oats
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoon cornstarch
- 1/2 cup chocolate chips Optional - I love the mini chocolate chips
Instructions
- In a small bowl combine - flour, oats, cinnamon, baking soda, salt and cornstarch - set aside
- In a large bowl with electric mixer cream together the butter, brown sugar, white sugar, egg and molasses
- Add the dry ingredients to the creamed ingredients and mix to combineAdd the chocolate chips
- You can make these cookies any size you like - great big or small - baking time will vary depending on how big or small you make the cookies
- Bake in a preheated 350° ovenGreat big cookies will take approximatly 15-17 minutesSmall cookies will take 8-10 minutes
