And really if you are going to eat something with the name Monster in it shouldn’t it have spare body parts?
I love the eye’s but wanted to be sure and add some bones and skulls too – I love holiday shaped sprinkles! I also sprinkled the purple sugar on the top because, well I could!
These are so simple to throw together and bake in one big sheet rather than individual cookies. The monsters kids who live in my house can destroy a whole pan of these in no time flat! They have oatmeal in them so they are healthy right?
My kids are pretty much grown now but these would be a terrific snack before the adventures of trick or treating, a little sweet, some fun and a little substance to fill those tummies instead of a ton of candy – that you have sifted through and taken the good stuff for yourself {wink wink}!

They don’t last long and all that is left are some eyes staring back at you!
Halloween Monster Cookie Bars
Ingredients
- 1/2 c. butter softened
- 1 c. sugar
- 1 c. brown sugar packed
- 1 c. creamy peanut butter
- 3 eggs
- 1 tsp. vanilla extract
- 2 tsp. baking soda
- 4 1/2 c. long-cooking oats uncooked
- 1 c. candy-coated chocolate pieces
- 3/4 c. mini semi-sweet chocolate chips
- Halloween sprinkles: Skulls and Bones Eyes
Instructions
- In a large bowl, blend together butter, sugars, peanut butter, eggs, vanilla and baking soda. Add oats and mix well. Fold in candy-coated chocolate pieces and chocolate chips. Spray a 15x10 jelly-roll pan or cookie sheet. Spread batter evenly in pan. Bake at 350 degrees for 20 minutes, 15 minutes into cooking time add your eyes and sprinkles to the top of your cookie bar, continue to bake till done. Cool completely; cut into bars. Makes 2 dozen.
