Cake, blueberries, cream cheese all together make a party in my mouth. When every word of a title “Easy Blueberry Cream Cheese Cake” speaks to my very soul, it’s a must have for breakfast or dessert or mid-afternoon coffee break!
Cake mixes are awesome, versatile and easy to use! I might have a slight obsession with yellow cake mix. My oldest actually requests just a yellow cake and chocolate frosting for her birthday’s. I always have at least 3 boxes on hand – you know for any yellow cake mix emergency that might arise.
Ask me what we are having for supper tonight and I have no clue – like none, nada. No plan, most likely no meat thawed out with not even a hint of a vegetable or side dish! Ask me to make a dessert and within 20 minutes I could make 4 at the minimum.
I like sweets, all the sweets. And I crave them in the morning, noon and night so I always have ingredients on hand! Seriously, like if you stopped by and needed me to fix you a meal I would struggle but stop by and need a snack – I’ll have something homemade in less than 30 minutes!
Easy Blueberry Cream Cheese Cake
Literally the other day I was rummaging around my kitchen for something sweet to make. I found a cake mix, cream cheese and blueberries…….who knew in less then an hour I would of scarfed down a whole cake!

Easy Blueberry Cream Cheese Cake
Ingredients
- 1 box yellow butter cake mix
- 1/2 cup vegetable oil
- 3 eggs
- 8 ounces cream cheese
- 2 cups fresh blueberries
- powdered sugar for dusting
Instructions
- Combine cake mix, oil, eggs and softend cream cheese with an electric mixer until well combined
- Stir in blueberries by hand
- Spread batter into a 9x13 dish sprayed with non-stick cooking spray
- Bake in a 350° pre-heated oven for 30-35 minutes until toothpick inserted in center of cake comes out clean
- Allow to cool and dust cake with powdered sugar
