Potato Salad is a hit at any pitch-in but show up with a batch of my Dill Potato Salad and yours will be the most requested. A new spin on an old favorite!
I love potatoes. Mashed, baked, boiled, fried……I’m like the Forest Gump of potatoes!
This potato salad makes me happy, it’s one of my most requested dishes, ranking right up there with my macaroni and cheese – which is no small feat, as my mac and cheese has the tendency to make your eyes roll back in your head, it’s seriously that good!
Dill Potato Salad
This is so easy to and make serve immediately or whip it up ahead of time and store in the refrigerator, it’s just as delicious!
Just a few simple ingredients – red potatoes, hard boiled eggs, onion, Hellman’s and dill. I always use dried dill because it is readily on hand and seems to have a deeper flavor than fresh, but feel free to use fresh just know that it takes quite a bit more fresh dill than the dried!
I’m also gonna say don’t get too caught up in the measurements. Don’t like a lot of mayo, add less to yours! Not a fan of sweet onion try red onion or green onion or no onion! Sounds like a lot of Dill…..add less.

Dill Potato Salad
Ingredients
- 1.5 pounds of baby red potatoes or baby golden - both work very well
- 6 hard boiled eggs
- 1 cup of Hellmans Mayo
- 1/2 cup finely diced sweet onion
- 2-3 tablespoons of dried dill weed
- salt and pepper to taste
Instructions
- Boil potatoes until fork tender, cool on paper towel till easy to handle, cut into bite sizes
- Dice hard boiled eggs
- Combine all ingredients in a bowl stirring carefully to combine.

Could you use Onion Powder instead of real onion if so how much would you use in this recipe? Thank you MARIE
I would think you could but to be honest I have never tried, my best advice would be to add a teaspoon or so then taste and add more from there! I hope that helps!
