I love dill so when I decided I wanted to make egg salad I knew it would include dill. My Dill Egg Salad turned out just the way I wanted!
I won’t lie, I kind of avoided egg salad like the plague. Chopped up eggs and mayo weren’t my jam! At least that what I thought all egg salad was. I was wrong, it can be anything you want it to be!
And I wanted mine to have dill, petite died red bell pepper and a hint of Dijon mustard in it – so that’s how I made it!
Dill Egg Salad
We love hard boiled eggs around here! They are easy to make, easy to eat and full of protein for a great snack or as part of a salad!
This egg salad tastes great on toast as a sandwich but I was totally surprised how awesome it was on just a leaf of lettuce!
I’ve made hard boiled eggs on the stove and in the Instant Pot – both are great! I also know people make them in the oven – I’ve never tried this but it seems to be popular.
Dill Egg Salad
Ingredients
- 6 eggs hard boiled - diced
- 1 Tablespoon mayonaise
- 1-2 Tablespoons dijon style mustard
- 1 teaspoon dried dill weed
- 3 Tablespoons petite diced red bell pepper or your favorite color bell pepper
- salt and peper to taste
Instructions
- Carefully combine all ingredients, salt and pepper to taste
