My sister makes Monster Cookies all the time and my kids beg me to make them so when I came across this recipe in the Mom Knows Best Cookbook (Everyday Cookbook Collection)""” target=”_blank” rel=”noopener”>Gooseberry Patch Cookbook “Mom Knows Best”  I knew it was the first recipe I wanted to try!  And while I felt like it was making a ton they disappeared in the blink of an eye!

Quickie Monster Bars

I’m always looking for quick, tasty and healthy – they have oats and peanut butter so it qualifies as healthy in my book – snacks to take to the county fair for the kids and these will be perfect!  The fact I can put all the batter in one pan bake off and cut into bars that still taste like the Monster Cookies my kids love is just a huge bonus!

The first time I made this recipe I saw the amount of batter it made, then how many good size bars I was able to cut after they were baked and thought Holy Cow-we will be sick of these before they are gone…….I was totally wrong!  As soon as the last one disappeared the next kid through the kitchen was begging me to make more!

This recipe is a definate keeper!

Quickie Monster Bars

Ingredients
  

  • 1/2 c. butter softened
  • 1 c. sugar
  • 1 c. brown sugar packed
  • 1 c. creamy peanut butter
  • 3 eggs
  • 1 tsp. vanilla extract
  • 2 tsp. baking soda
  • 4 1/2 c. long-cooking oats uncooked
  • 1 c. candy-coated chocolate pieces
  • 3/4 c. mini semi-sweet chocolate chips

Instructions
 

  • In a large bowl, blend together butter, sugars, peanut butter, eggs, vanilla and baking soda. Add oats and mix well. Fold in candy-coated chocolate pieces and chocolate chips. Spray a 15x10 jelly-roll pan or cookie sheet. Spread batter evenly in pan. Bake at 350 degrees for 20 minutes. cool completely; but into bars. Makes 2 dozen.
